Mashed Potato Patties

I'm in the process of writing my own cookbook and this is one of my recipes going in the book!
These are delicious savory mashed potato patties. Crispy on the outside creamy on the inside.
4 cups of leftover mashed potatoes
1/2 cup milk
1/3 cup breadcrumbs
1/4 cup yellow onion minced
1/4 cup green onion minced
1 egg
1 tsp. dried parsley
1/2 tsp salt
1/4 tsp. pepper
1/8 tsp garlic powder
season to taste
Put all ingredients in a bowl and stir till they are all combined. With your hands shape into small patties, average 14-16 patties. Coat a skillet with olive oil over medium-high heat. Add patties 4-5 minutes each side.
Top each one with:
ketchup
sour cream
bacon
hot salsa or salsa
bacon (or sausage) eggs and melted cheese
They also freeze very well. Partially freeze in a single layer on a plate or baking sheet. Once partially frozen store in a freezer-safe container or bag. Thaw on counter or all night in the fridge. Reheat in your microwave or hot skillet very well.
